Aragón isn’t the first place people think of for a top Spanish red, and that’s exactly why I love pouring this one. Everyone who tries it wants to know where it’s been hiding.
Pago de Aylés is a huge historic estate of around 3,000 hectares near Mezalocha, south of Zaragoza. It was the first property in Aragón to win its own Vino de Pago status, Spain’s single-estate classification, which only a handful of places hold. Only a small part of the land is planted, and for their flagship ‘Tres de 3000’ they choose three low-yielding varieties: Garnacha, Merlot and Cabernet Sauvignon, in roughly equal parts. The wine spends about a year in French and American oak and comes in a heavy Burgundy-style bottle, a nod to its place at the top of the range.
In the glass it’s a deep, intense cherry. The nose brings ripe blackcurrant and black cherry, cracked pepper, a gentle bell-pepper note from the Cabernet, some floral hints and a mineral streak. The palate is broad and balanced, with fresh acidity, ripe tannins and a long, fruity finish. It can throw a natural sediment, so decanting is a good idea.
Try it with slow-roasted ternasco (Aragonese lamb), beef cheeks braised in red wine, or a mature Roncal cheese.
