CHEERS & CHEESE: HAPPY ANIMALS MAKE HAPPIER CHEESE
No sad cows. No grumpy goats. No rubbery cheese wrapped in red wax. Just artisan Spanish cheeses, beautiful wines, and the happiest pairing you’ll have all summer.
Five wines. Five cheeses. Zero boring pairings.
Every cheese on our board comes from Spanish farms where quality, tradition and animal care go hand in hand — because happy animals simply make happier cheese, and your taste buds can tell. We’ll pair them with equally exceptional wines, because life’s far too short for mediocre wine or cheese from a grumpy goat.
🍾 THE LINEUP 🍾
🥂 Attis Lías Finas — Rías Baixas
The Albariño for anyone who thinks Spanish whites all taste the same. From the cool, Atlantic Val do Salnés and aged on its fine lees for extra texture — one sip and that argument is over.
🥂 Bodegas Zapata Verdejo — Rueda
Verdejo from vines over fifty years old, fermented in stainless steel to keep it fresh and honest. Young, easy and dangerously drinkable — exactly what a tangy goat’s cheese is begging for.
🥂 LC Rosé
Our pink pour of the evening — bright, summery and built for the terrace. The perfect palate-cleanser between cheeses, and quite possibly the glass you’ll ask seconds of.
🥂 Senderos de Ukan — Tempranillo
The second wine of Ukan, from Tempranillo vines averaging fifty years of age. Supple, savoury and generous — the red that makes a semi-cured sheep’s cheese sing.
🥂 Convento Las Claras, Heritage Reserva — Ribera del Duero
100% Tinto Fino, patiently aged in French and American oak. Structured, serious and built to finish the night alongside the boldest cheese on the board.
YOUR HOST
Martha has been matching Spanish wine and cheese for more years than she’d care to count — and she runs the room like a conversation, not a lecture. She’ll want to know which wines you love and why, she’ll ask you to score your favourites, and she’ll happily talk through what makes each pairing work. Join in as much or as little as you like — questions are always encouraged.
