I’ve opened this at more tastings than almost anything else on the shelf, purely for the moment when I tell people where it’s been. Nine months on the seabed, twenty-four metres down off the coast at Alicante — and then they taste it and stop talking about the sea entirely, because underneath all of that it is a genuinely lovely Cava.

The fruit comes from two plots in the Penedès, one of old Macabeo and the other of younger Xarel·lo and Parellada, on mineral soils close to the water. It’s made naturally and organically, with a small parcel of the base wine rested in second-fill Austrian oak to become the expedition liqueur. Then a minimum of twenty-eight months en rima before disgorging — a proper Reserva by any measure — and only after all of that does it go into the sea.

In the glass it’s clear and bright with a fine, creamy bead that keeps going. White peach and stone fruit first, then white flowers, a little honey, and a real depth of brioche and pastry. The palate is fresh and beautifully knit, the acidity completely folded in, and it finishes long and clean. It drinks like a Cava with several more years on it than it has.

Serve it properly cold, 6–8°C. Ibérico ham with pan con tomate is the obvious pairing and it’s obvious for a reason, but it’s just as good with smoked fish, or with something richer than you’d normally put a Cava next to.

Goes with

Perfect accompaniment to complex dishes and meats. It is also serves an excellent complement to savour smoked or Iberian ham accompanied with bread with tomato. And to conclude this recommendation, you simply cannot omit desserts; the aromas produced from its lengthy aging process pair extraordinarily well with nuts and desserts that have lighter, sweet flavours.

Bodega Submarina del Mediterraneo

Bodega Submarina del Mediterraneo spent seven years working alongside the Universidad de Alicante before they sold a single bottle, which is why I take them seriously rather than as a novelty. Their cellar is a set of patented silos sitting twenty-four metres down off Cabo de las Huertas, a mile and a half from the bay of Alicante, where the water holds between 15 and 19°C all year and the current never stops moving. The university still analyses every batch that comes back up, and their research found the silos working as artificial reefs, with posidonia meadows regenerating around them. They come to Moraira every year to pour these themselves, which is always one of the best hours in our calendar.

By completing this booking you are agreeing to these terms and conditions.

Group Coordinator.

In order to book your event we require a single coordinator of your group. As the Group Coordinator you are responsible for all communications with Martha’s Vineyard. You ensure that all group members are at least 18 years old. You will be responsible for the payment of any deposit and final payment at the event. The final payment may be split between members of your group but you take sole responsibility that the final payment is completed in full.

Deposit

To Conform your booking we require a 50% deposit of the total payable amount for your event. The balance must be paid before the event.

Changes to Booking

You may make changes to the number of guests in your party prior to the event provided that you do not fall below the minimum acceptable group count of 10. You must inform Martha’s Vineyard of your requested changes and receive confirmation that the changes are acceptable. Please note: You will not be able to remove guests from your party within 5 days of the event. You may add guests to your event up until 2 days prior to your event.

Refunds

Once you have completed your booking you may request a refund of any deposit if you cancel your booking.
Up to 14 days prior to the Event – 100% refund
Up To 7 days prior to the Event – 50% refund.
Less than 7 days prior to the Event – no refund.

Please note that if you wish to cancel the booking entirely or in part less than 3 days prior to the event you will be required to pay the full price of the event. As group coordinator you are solely responsible to complete this payment on or before the date of the event.
