About The Wine

Located in the coastal town of Bakio, a place considered the birthplace of txakolina wine in Bizkaia.
The closeness of the Bay of Biscay and the protection by the west-facing hill-sides, provides a unique climate to the area. The south/south-west facing vineyards possess diverse types of soil that gives an oportunity to create wines with a pronounced personality.
The premise is the reinterpretation of tradition, the comprehension of the environment and the new ways of understanding viticulture and winemaking.

Doniene Gorrondona has backed since its foundation the creation of a sustainable project, in total respect for the environment. Their believe is that the friendlier they are with nature, the products offered by it, will be of greater quality. That is the reason why their work dynamic is governed by the following parameters; use of cork from certified farms instead of the chemically treated ones, the recovery of 15% of cardboard, and the selection of barrels from cooperages with certificates of forest sustainability.
Since 2011 they are going one step further, initiating a project that aims to create a collection of their own scents, based on the ecology of their vineyards.  Having identified the microbiota in each vineyad in order to ferment with them and get high terroir expression.

Between september 14 and september 25. Manual harvest and in boxes. The grape enters the winery within a maximum period of 3 hours. With a scope to express the soils and grape varieties. Destemming and short cold maceration. Made from  the free-run juice. Winemaking separated by plots. Fermentation with yeast identified in the vineyards. Aging with lees in stainless steel tanks, for about six to nine months. Minimal use of sulfur. Blending of the plots in April 2023.

Doniene Gorrondona Txakolina has 15 hectares (ha) of vineyard, owned and leased, in production. Its vineyards are located on the midday-oriented slopes in Bakio. They grow on estates with a variety of soils thar are within 0 and 250 metres above sea level.

Terms and Conditions

By completing this booking you are agreeing to these terms and conditions.

Group Coordinator.

In order to book your event we require a single coordinator of your group. As the Group Coordinator you are responsible for all communications with Martha’s Vineyard. You ensure that all group members are at least 18 years old. You will be responsible for the payment of any deposit and final payment at the event. The final payment may be split between members of your group but you take sole responsibility that the final payment is completed in full.

Deposit

We may require a 50% deposit of the total payable amount for your event. The balance must be paid at the event.

Changes to Booking

You may make changes to the number of guests in your party prior to the event provided that you do not fall below the minimum acceptable group count of 6. You must inform Martha’s Vineyard of your requested changes and receive confirmation that the changes are acceptable. Please note: You will not be able to remove guests from your party within 5 days of the event. You may add guests to your event up until 2 days prior to your event.

Refunds

Once you have completed your booking you may request a refund of any deposit if you cancel your booking.
Up to 14 days prior to the Event – 100% refund
Up To 7 days prior to the Event – 50% refund.
Less than 7 days prior to the Event – no refund.

Please note that if you wish to cancel the booking entirely or in part less than 4 days prior to the event you will be required to pay the full price of the event. As group coordinator you are solely responsible to complete this payment on or before the date of the event.
