About The Wine

A Pago with its own identity. In 1997 Florentino Arzuaga, owner and founder of Bodegas Arzuaga, landed in Castilla-La Mancha attracted by the world of oil, and in particular by the Cornicabra olive variety, which reaches its maximum splendor in the Montes de Toledo area. .

After acquiring 150 hectares of land, the production of oil by the Arzuaga family begins. In search of new land for planting olive trees, Florentino Arzuaga found the ‘La Solana’ farm, ideal for planting vineyards in the town of Malagón, province of Ciudad Real.

The vineyard
The peculiar location of the ‘La Solana’ farm at the foot of a mountain range means that its land is on an ideal slope for growing vines due to aeration and sunlight.

The vineyard floor is full of granite rocks and clay bedding that adds a special mineral load that can be perceived in the grapes. These vineyards have a drip system to avoid reaching the level of water stress.

Pago Florentino is made 100% with Cencibel grapes. The chosen bunches were harvested in 15 kg boxes, selected on the table and subsequently destemmed. The grapes were vatted in stainless steel tanks by gravity, macerated for 4 days in the cold and then alcoholic fermentation took place at a temperature below 28º C.

After this alcoholic fermentation, we introduced the wine into new French and American oak barrels to carry out malolactic fermentation and subsequent aging for 12 months in French and American oak barrels.
