This is the follow-up to the Alpha Ígneo, and it works on the same beautiful idea: a wine born on volcanic rock and then finished under the sea. The producers describe it as marine depth and mineral purity in the same glass, and having tasted what the Alpha did, I believe them.
The maturation is the part that makes people put their glass down and ask questions. Bodega Submarina del Mediterráneo spent seven years developing the method with the Universidad de Alicante, and the bottles go into patented silos twenty-four metres down off Cabo de las Huertas, just outside the bay of Alicante. Down there the water holds between 15 and 19°C the whole year round, it is permanently dark, and the current never stops moving. They are the only winery in the world running a fully standardised winemaking project built around underwater ageing, and the method itself stays firmly their own secret.
Two thousand five hundred and sixty bottles, released annually in small numbers. Not a novelty — one of the genuinely unusual things we can put on a shelf.
