Great cheese starts long before it reaches the board. It starts with cows, sheep and goats living their best lives โ good grazing, fresh air, the occasional nap in the sun. Happy animals make happy cheese. And happy cheese deserves a very good glass of wine.

Martha has matched every wine to its cheese โ from a crisp Galician white to a big, bold Toro red taking on a blue. Some pairings are old friends; one or two might just surprise you. Come hungry, come curious.

๐ฅ Siah 2024 โ Bodegas SIAH, D.O. Ribeiro + Tizne
Isabel Salgado’s white blends three native Galician grapes โ Albariรฑo, Godello and Treixadura โ from vineyards in Leiro, close to the Avia river. Fresh, textured and the perfect way to wake up the palate. Its partner’s name means “soot” in Spanish. Trust us on this one.
๐ฅ El Cuentista 2022 โ PradoRey, D.O. Ribera del Duero + Tronchรณn
A white wine made from red Tempranillo grapes. Ribera del Duero is red-wine country, which makes this blanc de noirs the region’s storyteller (that’s what “cuentista” means) โ and a bit of a rebel. Expect a few raised eyebrows, then a few refills.
๐ฅ Tobelos Rosado 2023 โ Bodegas Tobelos, D.O.Ca. Rioja + Manchego
From a winery in Briรฑas, just 2km from Haro, with grapes drawn from three small vineyards in Briรฑas, Labastida and San Vicente de la Sonsierra. Bright, juicy and the ideal match for Spain’s most famous sheep’s cheese.
๐ฅ Formiga de Vellut 2020 โ Clos Galena, D.O.Q. Priorat + Truffle Manchego
Organic Garnacha and Syrah from Priorat’s steep slopes. An earlier vintage of this wine was poured at the Nobel Prize dinner in 2014 โ tonight it meets truffle, which feels like a fair trade.
๐ฅ El Primer Paso 2020 โ Dominio del Bendito, D.O. Toro + Blue Cheese
Tinta de Toro from young and old vines โ deep, dark and confident. It needs a cheese that can stand up to it, so we’ve saved the blue for last. The finale you came for.

Martha has been matching wine to food for more years than she’d care to count, and she still gets excited about a good pairing. She runs the room like a conversation, not a lecture โ she wants to know which wines you love and why, she’ll ask guests to score their favourites and chat about which pairing won the night, and she makes you feel part of the whole experience. Join in as much or as little as you like. Questions are always encouraged.

Martha is a retired diplomat for the Colombian government, having years of experience in the organization and creation of cultural events including the famous annual Latin American Festival in Istanbul. Over the last 15 years Martha lived in the Southern California wine area and contributed to the creation of numerous wine experiences, such as chocolate wine pairings for some of the biggest wineries of the area. Now living in Moraira, she is in a mission to bring wine lovers together with the wine makers of Alicante in a series of fun, entertaining and educational events.
